Chicken Stir Fry Recipe


This is my go-to recipe! It’s pretty quick, easy, delicious and nutritious! You can substitute any veggies for the ones you like. You can really get creative with this dish.

Chicken Stir Fry  (Serves 4)


  • 3 boneless chicken breasts, cut into strips

  • 1 cup broccoli, cut into bite-size pieces

  • 1 cup zucchini, sliced into 1-inch pieces

  • 1 cup carrots, sliced into 1-inch pieces

  • 1/2 cup snap peas

  • 1/2 red bell pepper, sliced into strips

  • 1/4 white onion, chopped

  • 2 cloves garlic, chopped

  • 1 Tbs. low sodium tamari

  • 1 Tbs. ghee


Sea salt &pepper

  • Directions:

    • Add ghee to heated skillet

    • Add onions and sauté until translucent brown

    • Add chicken and sauté until chicken starts to become white on the outside

    • Add remaining ingredients and sauté about 10 minutes making sure chicken is cooked through.

    • Add salt and pepper to taste

    • Serve over1/2 cup brown rice (optional)

       Health Benefits:

    • Broccoli is abundant in antioxidants, including quercetin, glutathione, beta carotene, vitamins C and K and lutein.  Broccoli speeds up the removal of estrogen, helping suppress breast cancer.  It is also high fiber and chromium, which helps regulate blood sugar.

    • Zucchini is highly alkaline, which is excellent for acidosis of the liver and blood.  Zucchini is high is magnesium, manganese, potassium, Vitamin C, folate and fiber.

    • Ghee is clarified butter, the oil of butter with the milk solids removed.  Ghee is much less mucus-forming than butter and contains no lactose.  Ghee has a very high smoke point and doesn’t burn easily during cooking.  Ghee’s short chain of fatty acids also metabolized very readily by the body.  Ghee is good for nerves and brain, reduces cholesterol, helps control eye pressure, stimulates stomach acids to help with digestion, promotes learning and increases memory retention and is very rich in antioxidants.
