A Hearty Breakfast

Poached eggs over greens is my favorite breakfast!
Greens (spinach, kale, baby collards-whatever you enjoy!): lightly sauté in 1 Tbs. of ghee until wilted.
2-3 poached eggs: get some water boiling, add 2 Tbs. (approx.) of vinegar. The vinegar holds the egg together when you drop it in the water. Make sure there’s enough water so the eggs don’t hit the bottom when you drop them in. Drop the egg in gently and let boil for about 3-5 minutes depending on if you like the yoke runny or not. Remove and place over greens. Add salt and pepper, to taste. I like to add a little pesto, sauerkraut and feta cheese to spice it up! I usually add a few veggies on the side: baby carrots with hummus, sliced cucumber with pesto, shiitake mushrooms, etc. You can add whatever you like.

It’s a pH balanced breakfast with protein and healthy fats to start the day off right! This will balance your blood sugar and prevent you from having those drops in energy (from a refined, sugary breakfast of bagels, cereal, muffins, etc.).
