Easy Roasted Chicken Drumsticks & Zucchini


Hello Friends! I love an easy, healthy meal. I’m always trying to find easy, delicious ways to eat my veggies and roasting is the way to go.  I’m also always trying to find and share recipes that don’t take too much work, time or ingredients. There’s nothing more annoying than finding a yummy recipe and seeing that I need to go out and specifically buy 5 new items that I don’t have on hand. This meal is balanced – containing organic, clean protein, healthy fats, and complex carbs (low carb) as well as vital nutrients, such as vitamin C, B vitamins, magnesium, manganese and potassium (just to name a few!).

Here’s the scoop (serves 2):

4 organic drumsticks (cheap if you buy in bulk at Costco & freeze half of them)

1 large organic zucchini

2 cloves garlic, minced

1/3 white onion, sliced

1/2 Tbs. organic extra virgin olive oil

Use organic spices (buy in bulk at Whole Foods to save money): garlic powder, onion powder, thyme, sea salt & ground pepper



Preheat the oven on roast at 350 degrees.  Season chicken with garlic powder, onion powder, salt & pepper and place in a glass baking dish. Leave uncovered to roast.  Cook for 60 minutes.  While chicken is cooking, cut up zucchini, onions, garlic & place in glass baking dish. Season with garlic powder, onion powder, thyme, salt & pepper.  Cover and roast (same temp as chicken- 350 degrees) in the oven for 20 minutes. Take out, uncover and roast another 10-15 minutes (depending on how you like your veggies. I like them a little crunchy).   When done, drizzle olive oil over the veggies and serve with chicken.
