Colorful Cobb Salad


Colorful Cobb Salad

(Serves 2)

**Always use ORGANIC and/or local ingredients when possible!


  • 2 heads of romaine lettuce
  • ½ cup cherry tomatoes
  • 1 avocado
  • 3 eggs
  • 5 slices of organic or local bacon

For the chicken breast:

  • 1 boneless skinless pastured chicken breast
  • 1 tbsp coconut oil
  • ½ tsp sea salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp paprika

For the dressing:

 OMIT chicken, egg and bacon if vegan.


  • Season chicken with spices and coat with coconut oil and then bake on 400 for 30 minutes.
  • Cook bacon in pan until done, allow to cool on plate with paper towel and then break up into small bite size pieces.
  • Boil eggs and put in bowl with cold water to let cool. When cool, peel and chop.
  • Chop up romaine, tomatoes, and avocado.
  • Mix dressing in a mason jar and can be stored in fridge for a week.

Add chicken, chopped veggies, bacon, eggs to salad greens and enjoy.
